I have a few more extra jun/kombucha scobys for sale to make your own Jun! The scobys are large and thick (as seen in the photos) and active enough to brew a gallon of jun right away! Jun is a milder tasting type of kombucha that is made from green tea instead of black and honey instead of white sugar. The scoby is therefore adapted to these ingredients and is slightly different to the scoby of kombucha. The fermentation is also faster than that of kombucha by a few days, typically taking 3-5 days instead of 7-10 for kombucha. It is therefore easier to have a continuous supply of jun. Jun therefore has all the health benefits of kombucha being comprised of beneficial bacteria and fungus, but in addition it also has the benefits of green tea and honey! It’s a perfect replacement for soda and much cheaper to make at home than to buy either soda or especially jun at the store. Recipe; Take a scoby with some leftover jun (about 0.5-1 cup) and put into gallon sized jar. Brew several cups (4-6 cups) of green tea with 4-6tsp of loose leaf green tea. Wait till it’s not too hot to the touch before adding 1 cup of honey and mixing well. When room temperature or warm, add tea mixture to scoby in the jar and top off with chlorine free water until water fills up to the widest part of the jar. The scoby needs to be in the dark, but needs to breath oxygen, therefore cover the top of the jar with a cloth secured by elastic and put away from sunlight. ( or wrap large cloth around whole jar) Taste your jun after a couple days and when you like the taste just filter with a muslin cloth and drink! Save about a cup of jun and the scoby for the next batch of jun. The jun gets more sour with time. If you leave it too long and over ferment it don’t throw it away! It will turn into a natural vinegar with a ph of about 2, which you can use as a fancy natural house cleaning solution just as you would with distilled white vinegar. XD
