Recipe storage: Stores up to 26 different chocolate recipes (melt, temper and delta points). This is for producing multiple varieties of chocolates whose characteristics do not conform to the Delta's default settings. Extended temper mode: Allows the chocolate to stay in perfect temper for 18 to 24 hours--compared with the X3210, which keeps the temper for only 1 to 1.5 hours. Machine timer/delayed start: Begin melt cycle up to 72 hours from the time of setting for chocolate to melt at specified time.
