Chef's Choice Model 15XV EdgeSelect Electric Knife Sharpener

Chef's Choice Model 15XV EdgeSelect Electric Knife Sharpener, a 3-stage professional sharpener designed for 15-degree blades. Current Retail $180 Excellent Condition Product Description The Chef’sChoice 15XV electric knife sharpener upgrades traditional 20° factory edges into sharper 15° edges that slice, dice, and mince with greater precision and less effort—even on delicate cuts. It also refines existing 15° knives for better cutting performance and edge retention. The 3-stage system creates the Trizor XV edge—a unique triple-bevel design built for strength, durability, and long-lasting sharpness. Stage 1 uses 100% diamond abrasives to shape the edge. Stage 2 refines and sharpens for precision. Stage 3 polishes for a clean, finished edge. To eliminate guesswork, flexible spring guides hold the correct angle from heel to tip, keeping each pass consistent and repeatable, while built-in angle controls help protect your knives, so you get the edge you need with confidence. Designed for both straight-edge and serrated knives, the 15XV delivers consistent, expert-level sharpening in about one minute, with quick touch-ups anytime.
