~ The Story of Goldie ~ Goldie & I have been together for over 14 years. She’s seen me through my high school graduation, my “what do I want to do with my life?” phase, my corporate career, my marriage, and so much more. She started with just two simple ingredients: organic all-purpose flour & warm water. From day one, she has lived in a beautiful glass WECK Jar inside my warm — and slightly chaotic — kitchen. Over the years, she’s been used to make hundreds of delicious meals, sweet treats, and, of course, beautiful artisan sourdough loaves. Some of my favorites are cinnamon rolls, blueberry muffins, pasta, tortillas, and deliciously soft sandwich bread. Really, almost any recipe that uses flour can be made with Goldie. It’s that simple. She has been fed, used, experimented with, and loved for well over a decade. Through it all, she has remained wonderfully dependable. Bring Your Own Jar — $5 Bring your own clean jar or container, and I’ll pour anywhere from 50–200 grams of Goldie directly into it — whatever amount you’d like. I’ll quickly go over any immediate questions or coaching needs you have, and I’ll be available afterward through text, email, or Messenger if you run into a question, an issue, or simply want a little more guidance. 2. Organic Sourdough Starter Beginner’s Kit — $50 If you’d rather not have to come with anything & leave with everything, I also offer my Organic Sourdough Starter Beginner’s Kit. No need to bring a thing. A Little About Goldie Goldie is my organic sourdough starter, made with organic all-purpose flour & purified, filtered warm water. I also have Dark Rye, Whole Wheat, Buckwheat, and other flour options available if you’d prefer something a little different. The How-To Basics Goldie prefers a 1:2:2 feeding ratio. What does that mean? The “ratio” refers specifically to how she is fed. The first number refers to the amount of starter, while the second & third numbers refer to water & flour. For example, if you have 50g of Goldie and want to follow her preferred 1:2:2 ratio, you would mix her with 100g warm water + 100g organic unbleached flour. She does prefer 1:2:2, but she is perfectly happy with 1:1:1 if that’s what your schedule or resources allow. She is also not terribly picky about the time of day. As long as you feed her a minimum of 8 hours after her last feeding and a maximum of 28 hours after her last feeding, you’re Golden. (Pun intended.) And if you’re leaving the house for more than 28 hours, that’s okay, too. Don’t stress. Feed her on her normal schedule, then put her in the refrigerator after feeding. She can stay in the fridge for as long as you need. When you’re ready to bring her back out, let her sit at room temperature for 8–28 hours, feed her as normal once she has warmed to room temperature (or close to it), and you’re good to go. Goldie’s preferred feeding method is simple. First, mix her with the water until she is completely incorporated. Then add the flour and mix again. If you have a ton of little flour clumps, keep mixing. If you have one or two, you’re fine. You can stop, or you can keep mixing. There is no such thing as over-mixing a sourdough starter. And finally, my biggest tip with Goldie: Use warmer water than you think. Most sourdough instructions will tell you to use water somewhere around 72–85°F. Goldie has always performed particularly well for me with warmer water, around 100–110°F. This is specific to how I care for Goldie and isn’t a universal sourdough recommendation.
